Prep the salmon. Pat the salmon dry with paper towels, then cut it into bite-size cubes. Dry salmon helps it crisp up better in the air fryer.
Season the pieces. Place the salmon in a bowl and drizzle with olive oil.
Add the garlic powder, paprika, salt, and black pepper, then gently toss to coat.

Make the ranch yogurt dip. Stir together the Greek yogurt, ranch seasoning, lemon juice, and optional dill or parsley.
Add the garlic if you want a sharper, more savory dip.
