Cajun Steak With Loaded Baked Sweet Potatoes - A Bold, Easy Dinner

Ingredients
  

  • 2 boneless ribeye steaks, about 10 to 12 oz each
  • 2 tablespoons olive oil
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt, if your Cajun seasoning is low in sodium
  • 1/2 teaspoon black pepper
  • 2 large sweet potatoes
  • 1 tablespoon butter
  • 1/4 cup sour cream
  • 1/4 cup shredded cheddar cheese
  • 2 tablespoons chopped green onions
  • 2 tablespoons cooked and crumbled bacon
  • 1 tablespoon chopped fresh parsley, optional
  • 1 teaspoon hot sauce, optional

Method
 

  1. Preheat the oven. Set your oven to 400°F. Line a baking sheet with foil or parchment paper for easier cleanup.
  2. Prep the sweet potatoes. Scrub the sweet potatoes clean, then pierce each one several times with a fork. Place them on the baking sheet and bake for 45 to 60 minutes, or until soft all the way through.
  3. Season the steak. Pat the steaks dry with paper towels. Rub both sides with olive oil, then sprinkle on the Cajun seasoning, garlic powder, smoked paprika, black pepper, and salt if needed.
  4. Let the steak rest briefly. Set the seasoned steaks aside for about 15 to 20 minutes while the sweet potatoes finish baking. This helps the seasoning stick and gives the meat a better sear.
  5. Cook the steak. Heat a cast iron skillet or heavy pan over medium-high heat until hot. Add the steaks and cook for about 3 to 5 minutes per side for medium-rare, or longer if you like them more done.
  6. Check for doneness. Use a meat thermometer if you have one. Aim for 130 to 135°F for medium-rare, 140 to 145°F for medium, and 150°F or higher for more well done.
  7. Rest the steak. Transfer the steak to a plate and let it rest for 5 to 10 minutes. This keeps the juices inside instead of running out when you slice it.
  8. Load the sweet potatoes. Cut each baked sweet potato open lengthwise and fluff the inside with a fork. Add butter, sour cream, cheddar cheese, bacon, green onions, and parsley if using.
  9. Serve and finish. Slice the steak against the grain and serve it alongside the loaded sweet potatoes. Add a little hot sauce on top if you want extra heat.
