Chia Yogurt Parfait With Fresh Berries - A Simple, Fresh Breakfast

Ingredients
  

  • 1 cup plain Greek yogurt
  • 1/2 cup milk or any dairy-free milk
  • 3 tablespoons chia seeds
  • 1 to 2 tablespoons honey or maple syrup, plus more to taste
  • 1/2 teaspoon vanilla extract
  • 1 cup fresh berries such as strawberries, blueberries, raspberries, or blackberries
  • 1/4 cup granola for topping, optional
  • 1 tablespoon chopped nuts or seeds, optional
  • Fresh mint leaves for garnish, optional

Method
 

  1. Make the chia mixture. In a medium bowl, stir together the milk, chia seeds, honey or maple syrup, and vanilla extract. Mix well so the chia seeds do not clump together.
  2. Let it thicken. Cover the bowl and place it in the fridge for at least 2 hours, or overnight if you want a thicker texture. Stir once after about 10 minutes if you can, since that helps the seeds spread evenly.
  3. Prepare the yogurt. In a separate bowl, stir the Greek yogurt until smooth. If you want a sweeter parfait, add a small drizzle of honey or maple syrup here too.
  4. Wash and prep the berries. Rinse the berries well and pat them dry. Slice strawberries if you are using them, and leave smaller berries whole.
  5. Layer the parfait. In a glass, jar, or bowl, add a layer of yogurt first, then a layer of chia pudding, then berries. Repeat the layers until you use everything up.
  6. Add toppings. Finish with granola, nuts, seeds, or a few extra berries on top. Add mint if you want a fresh look and a light herbal note.
  7. Serve right away or chill briefly. You can eat it immediately, or let it sit in the fridge for 15 to 20 minutes so the flavors blend a little more. The texture stays best when served cold.
