Line a muffin tin with paper liners or use silicone muffin cups. This makes it easy to remove the yogurt cups once they set.
In a medium bowl, stir together the Greek yogurt, peanut butter, honey or maple syrup, vanilla extract, and a pinch of salt if you want a slightly deeper flavor.
Spoon the mixture evenly into 8 muffin cups. Tap the pan gently on the counter to smooth the tops.
Place the chocolate chips and coconut oil in a microwave-safe bowl.
Heat in short 20-second bursts, stirring each time, until the chocolate melts completely.
Carefully spoon or drizzle the melted chocolate over each yogurt cup. Spread it lightly if needed so the tops get a nice chocolate layer.
Sprinkle crushed peanuts and mini chocolate chips over the top before the chocolate sets.
Freeze the cups for 2 to 3 hours, or until firm. Let them sit at room temperature for 5 to 10 minutes before eating so they soften slightly.
