  • 4 slices of sturdy bread, such as sourdough, whole wheat, or country bread
  • 1 cup cottage cheese
  • 2 medium ripe tomatoes, sliced
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt, plus more to taste
  • 1/4 teaspoon black pepper
  • 1 teaspoon fresh lemon juice, optional
  • 1 tablespoon chopped fresh basil or chives, optional
  • Pinch of red pepper flakes, optional

Method
 

  1. Toast the bread. Place the bread slices in a toaster, skillet, or oven until they turn golden and crisp. A sturdy bread works best because it holds up under the toppings without getting soggy too quickly.
  2. Prepare the tomatoes. Wash the tomatoes and slice them into medium-thick rounds. If they seem extra juicy, place them on a paper towel for a minute or two so they do not water down the toast.
  3. Season the cottage cheese. Spoon the cottage cheese into a bowl and stir in the salt, black pepper, and lemon juice if using. This small step adds more flavor and makes the toast taste more balanced.
  4. Assemble the toast. Spread a generous layer of cottage cheese over each slice of toasted bread. Top with tomato slices, then finish with olive oil, herbs, and red pepper flakes if you like a little heat.
  5. Serve right away. Cottage cheese toast tastes best while the bread is still crisp and the tomatoes are fresh. Add a final sprinkle of salt just before serving if needed.
