Creamy Tuscan Salmon with Garlic Parmesan Sauce - A Rich And Flavorful One Pan Dinner

Ingredients
  

  • 4 salmon fillets (about 6 ounces each), skin on or off
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/2 cup sun dried tomatoes, drained and chopped
  • 1 cup heavy cream
  • 1/2 cup chicken or vegetable broth
  • 1/2 cup grated Parmesan cheese
  • 3 cups fresh spinach
  • 1 teaspoon dried Italian seasoning
  • Salt and black pepper to taste
  • Fresh basil or parsley for garnish (optional)

Method
 

  1. Season the salmon. Pat the fillets dry with paper towels. Season both sides with salt, pepper, and Italian seasoning.
  2. Sear the salmon. Heat olive oil in a large skillet over medium high heat. Place the salmon skin side down (if using skin) and cook for 4 minutes. Flip and cook for another 3 minutes. The salmon should be golden brown and nearly cooked through. Remove it from the skillet and set aside.
  3. Cook the aromatics. In the same skillet, reduce the heat to medium. Add the minced garlic and sun dried tomatoes. Stir for about 1 minute until fragrant.
  4. Make the sauce. Pour in the heavy cream and broth. Stir and scrape up any brown bits from the bottom of the pan. Bring the sauce to a gentle simmer.
  5. Add the Parmesan. Whisk in the grated Parmesan cheese until it melts and the sauce thickens slightly, about 2 minutes.
  6. Wilt the spinach. Add the fresh spinach to the skillet. Stir until it wilts down, about 2 minutes.
  7. Finish the salmon. Return the salmon fillets to the skillet, nestling them into the sauce. Spoon some sauce over the top. Cook for another 2 minutes until the salmon is heated through and cooked to your liking.
  8. Serve immediately. Garnish with fresh basil or parsley if desired.
