Garlic Butter Smothered Pork Chops With Creamy Gravy

Ingredients
  

  • 4 bone-in or boneless pork chops, about 1 inch thick
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 cup all-purpose flour, for dredging
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 5 cloves garlic, minced
  • 1 small onion, finely chopped
  • 2 cups chicken broth
  • 1/2 cup heavy cream
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1 tablespoon chopped fresh parsley, optional

Method
 

  1. Season the pork chops. Pat the pork chops dry with paper towels. Season both sides with salt, pepper, paprika, and garlic powder.
  2. Dredge lightly in flour. Place the flour in a shallow dish. Coat each pork chop lightly, then shake off any extra flour. This helps create a nice crust and also thickens the gravy later.
  3. Sear the pork chops. Heat the olive oil in a large skillet over medium-high heat. Add the pork chops and cook for 3 to 4 minutes per side, until golden brown. Remove them from the pan and set aside.
  4. Make the garlic butter base. Lower the heat to medium. Add the butter to the same skillet, then stir in the onion and cook for 2 to 3 minutes. Add the garlic and cook for about 30 seconds, just until fragrant.
  5. Build the creamy gravy. Pour in the chicken broth and scrape up any browned bits from the bottom of the pan. Stir in the Worcestershire sauce and Dijon mustard, then let the mixture simmer for 2 minutes.
  6. Add the cream. Reduce the heat to low and stir in the heavy cream. Let the gravy cook gently for 2 to 3 minutes, until it starts to thicken.
  7. Smother the pork chops. Return the pork chops to the skillet. Spoon the gravy over the top, cover the pan, and cook for 6 to 10 minutes, depending on thickness, until the pork reaches 145°F internally.
  8. Finish and serve. Sprinkle with fresh parsley if you like. Serve warm with mashed potatoes, rice, noodles, or vegetables.
