Grandma's Salmon Patties - A Simple Old-Fashioned Favorite

Ingredients
  

  • 1 can (14.75 ounces) salmon, drained and flaked
  • 2 large eggs
  • 1/2 cup finely diced onion
  • 1/2 cup breadcrumbs
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 2 tablespoons chopped parsley, optional
  • 3 to 4 tablespoons oil, for frying

Method
 

  1. Drain the salmon well. Open the can and pour off any liquid. If you prefer, remove large bones or skin, but many people leave them in for extra flavor and texture.
  2. Mix the base ingredients. In a medium bowl, combine the salmon, eggs, onion, breadcrumbs, mayonnaise, mustard, lemon juice, salt, pepper, garlic powder, and parsley if using.
  3. Stir until the mixture holds together. The mixture should feel moist but firm enough to shape. If it seems too wet, add a little more breadcrumbs, one tablespoon at a time.
  4. Shape into patties. Form the mixture into 6 to 8 small patties. Press them gently so they stay together, but do not pack them too tightly.
  5. Heat the oil. Add oil to a large skillet and warm it over medium heat. The oil should shimmer, but it should not smoke.
  6. Fry the patties. Place the patties in the skillet and cook for about 3 to 4 minutes per side. They should turn golden brown and crisp on the outside.
  7. Drain and serve. Move the cooked patties to a plate lined with paper towels. Serve them warm with lemon wedges, mashed potatoes, coleslaw, or your favorite sauce.
