Prep the chicken. Pat the chicken breasts dry with paper towels.
If the pieces are very thick on one end, gently pound them so they cook more evenly.
Make the marinade. In a bowl, whisk together the olive oil, lemon juice, lemon zest, garlic, parsley, thyme, rosemary, salt, pepper, paprika, and honey if you want to use it.
Marinate the chicken. Place the chicken in a shallow dish or a zip-top bag and pour the marinade over it. Turn the chicken so every piece gets coated, then cover and refrigerate for at least 30 minutes. For stronger flavor, marinate for up to 4 hours.
Preheat the grill. Heat your grill to medium-high, about 400 degrees Fahrenheit.
Clean the grates and lightly oil them so the chicken does not stick.
Grill the chicken. Remove the chicken from the marinade and let the excess drip off. Place it on the grill and cook for about 5 to 7 minutes per side, depending on thickness.
Check for doneness. The chicken is ready when the thickest part reaches 165 degrees Fahrenheit. Use a meat thermometer for the most reliable result.
Rest before slicing. Move the chicken to a plate and let it rest for 5 minutes.
This helps keep the juices inside so the meat stays tender.
Serve and enjoy. Slice the chicken if you like, then serve with lemon wedges and your favorite side dishes.
