Preheat your oven to 400 degrees Fahrenheit. Place the oven rack in the middle position.
Heat olive oil in a large oven safe skillet over medium high heat. A 12 inch cast iron skillet works perfectly.
Add the diced onion and cook for 3 minutes until it starts to soften.
Add the ground beef to the skillet. Break it up with a wooden spoon. Cook for 5 to 7 minutes until the beef is fully browned. Drain off any excess fat if needed.
Stir in the minced garlic, smoked paprika, cumin, salt, and pepper. Cook for 1 minute until the spices are fragrant.
Add the diced sweet potatoes and drained tomatoes. Pour in the beef broth.
Stir everything together so the sweet potatoes are evenly coated with the spices and juices.
Bring the mixture to a gentle simmer. This should take about 2 minutes. Then spread the mixture into an even layer in the skillet.
Transfer the skillet to the preheated oven. Bake uncovered for 20 minutes.
Remove the skillet from the oven. Sprinkle the shredded cheddar cheese evenly over the top. Return to the oven and bake for another 5 minutes until the cheese is melted and bubbly.
Let the skillet bake rest for 5 minutes before serving.
Garnish with chopped fresh parsley if you like.
