High Protein Strawberry Shortcake Breakfast Parfaits - A Fresh, Filling Morning Treat

Ingredients
  

  • 2 cups plain Greek yogurt
  • 1 cup cottage cheese
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • 2 cups fresh strawberries, hulled and sliced
  • 1 teaspoon lemon juice
  • 1 1/2 cups shortbread cookies or graham crackers, crushed
  • 1 cup high-protein granola
  • 1 scoop vanilla protein powder, optional
  • 1 tablespoon chia seeds, optional
  • Fresh mint for garnish, optional

Method
 

  1. Prep the strawberries. Place the sliced strawberries in a bowl and toss them with the lemon juice. If you want them sweeter, add 1 teaspoon of honey and let them sit for 5 to 10 minutes. This helps bring out their juice and makes them taste more like classic strawberry shortcake filling.
  2. Mix the creamy base. In a medium bowl, stir together the Greek yogurt, cottage cheese, honey or maple syrup, vanilla extract, and protein powder if you are using it. Mix until smooth and well combined. If you want a thinner texture, add a splash of milk.
  3. Get your crunch ready. Crush the shortbread cookies or graham crackers into small pieces. You want some fine crumbs and some larger bits so the parfait has a nice texture. Keep the granola nearby so you can layer everything quickly.
  4. Start layering. Spoon a layer of the yogurt mixture into the bottom of each glass or jar. Add a layer of strawberries, then a layer of crushed cookies or graham crackers, followed by a little granola. Repeat the layers until you reach the top.
  5. Finish with a pretty top. Add a final spoonful of yogurt, then top with strawberries, a few crumbs, and a sprinkle of chia seeds if you want extra texture. A small mint leaf on top makes it look fresh and bright.
  6. Serve right away or chill. You can enjoy the parfaits immediately for the best crunch, or chill them for up to 30 minutes if you like a colder breakfast. If you are making them ahead, keep the crunchy layers separate until serving.
