Honey Garlic Shrimp With Roasted Vegetables - A Quick, Flavorful Dinner

Ingredients
  

  • 1 pound large shrimp, peeled and deveined
  • 2 cups broccoli florets
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 zucchini, sliced into half-moons
  • 1 red onion, cut into wedges
  • 2 tablespoons olive oil, divided
  • Salt and black pepper, to taste
  • 3 tablespoons honey
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon lemon juice
  • 1 teaspoon cornstarch
  • 2 tablespoons water
  • 1/2 teaspoon red pepper flakes, optional
  • 1 tablespoon chopped parsley, for garnish
  • Cooked rice, quinoa, or noodles, for serving, optional

Method
 

  1. Preheat the oven. Set your oven to 425°F. Line a large baking sheet with parchment paper for easier cleanup.
  2. Prep the vegetables. Add the broccoli, bell peppers, zucchini, and red onion to a large bowl. Drizzle with 1 tablespoon olive oil, then season with salt and black pepper. Toss until everything looks lightly coated.
  3. Roast the vegetables. Spread the vegetables on the baking sheet in an even layer. Roast for 15 to 20 minutes, stirring once halfway through, until they are tender and lightly caramelized.
  4. Make the honey garlic sauce. While the vegetables roast, combine the honey, garlic, soy sauce, lemon juice, cornstarch, water, and red pepper flakes in a small bowl. Stir well so the cornstarch dissolves completely.
  5. Cook the shrimp. Heat the remaining 1 tablespoon olive oil in a large skillet over medium-high heat. Add the shrimp in a single layer and cook for about 1 to 2 minutes per side, until they turn pink and opaque.
  6. Add the sauce. Pour the honey garlic sauce into the skillet with the shrimp. Stir gently and cook for 1 to 2 minutes, until the sauce thickens slightly and coats the shrimp.
  7. Combine and serve. Add the roasted vegetables to the skillet or serve them alongside the shrimp. Spoon the sauce over everything and finish with chopped parsley. Serve warm with rice, quinoa, or noodles if you want a fuller meal.
