Italian Sausage and Ravioli Casserole - Easy Weeknight Comfort Food

Ingredients
  

  • 1 pound Italian sausage, mild or hot, casings removed if needed
  • 1 tablespoon olive oil
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 1 jar marinara sauce (24 ounces)
  • 1 can diced tomatoes (14.5 ounces), drained slightly
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper
  • 1 package refrigerated or frozen cheese ravioli (20 ounces)
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley, optional for garnish

Method
 

  1. Preheat the oven to 375°F and lightly grease a 9x13-inch baking dish.
  2. Cook the sausage in a large skillet over medium heat until browned and fully cooked. Break it into small pieces as it cooks so it spreads nicely through the casserole.
  3. Add the onion and cook for 3 to 4 minutes until softened. Stir in the garlic and cook for 30 seconds more.
  4. Mix in the sauce, diced tomatoes, Italian seasoning, salt, and pepper. Let the mixture simmer for 5 minutes so the flavors blend together.
  5. Spread a thin layer of sauce on the bottom of the baking dish. This helps keep the ravioli from sticking.
  6. Add half the ravioli in an even layer over the sauce. Spoon half of the sausage sauce over the ravioli, then sprinkle with half the mozzarella and half the Parmesan.
  7. Repeat the layers with the remaining ravioli, sauce, mozzarella, and Parmesan.
  8. Cover the dish with foil and bake for 25 minutes. Remove the foil and bake for another 10 to 15 minutes until the cheese is melted and bubbly.
  9. Let it rest for 5 to 10 minutes before serving. Garnish with parsley if you want a fresh finish.
