Loaded Sweet Potato Fries With Cheese And Bacon - A Crispy, Cheesy Favorite

Ingredients
  

  • 2 large sweet potatoes, peeled if you prefer and cut into fries
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 6 slices bacon, cooked crisp and crumbled
  • 2 green onions, thinly sliced
  • 1/4 cup sour cream, for serving
  • 1 tablespoon chopped parsley, optional

Method
 

  1. Preheat the oven. Set your oven to 425°F. Line a large baking sheet with parchment paper or foil for easier cleanup.
  2. Prep the sweet potatoes. Cut the sweet potatoes into even fries so they cook at the same rate. Try to keep them similar in size for the best texture.
  3. Season them well. Toss the fries in olive oil, salt, black pepper, garlic powder, and paprika. Make sure every piece gets coated.
  4. Arrange in a single layer. Spread the fries out on the baking sheet without crowding them. If they overlap too much, they will steam instead of crisp.
  5. Bake until tender and crisp. Roast for 20 to 25 minutes, flipping halfway through. The fries should be golden on the edges and soft in the center.
  6. Add the cheese and bacon. Sprinkle the cheddar and mozzarella over the hot fries, then top with the crumbled bacon. Return the tray to the oven for 3 to 5 minutes, just until the cheese melts.
  7. Finish and serve. Top with sliced green onions and parsley if you want a fresh finish. Add sour cream on the side or drizzle it over the top before serving.
